5 Sweet & Savory Keto Friendly Jam Recipes

Low Carb Pork Skewers with Spicy Peach Mango Glaze
Adapted from Z Living’s Pork Skewers with Spicy Mango Glaze
Ingredients:
● 1 lb Pork Tenderloin, cut into 1 in. cubes
● 1 medium Zucchini, cut into ½ in. pieces
● 1 medium Squash, cut into ½ in. pieces
● 1 large Red Onion, cut into ½ in. pieces
● Jackie’s No Sugar Added Peach Mango Jam
● 1-2 finely diced Habanero peppers
● Wooden Skewers, soaked in water for at least 30 minutes
Preheat grill or grill pan to medium high heat. Skewer the pork pieces alternating between meat and veggies. Skewer evenly across all soaked wooden skewers. Season with salt and pepper to taste.
Mix Jackie’s No Sugar Added Peach Mango Jam and diced habanero. If the mixture is too thick to brush or baste as a glaze, add a tablespoon of water and mix thoroughly.
Grill each skewer about 3 minutes on each side. Baste with jam and pepper glaze. Continue to baste, turning kabobs for 4-6 minutes until the meat juice runs clear.
This dish is delicious served on a bed of cauliflower rice or wilted salad greens.
Mango Glazed Pork Loin
Adapted from a recipe from Just a Pinch Recipes
Ingredients:
● 1-2 jars Jackie’s No Sugar Added Peach Mango Jam
● 2 tbs Dijon Mustard
● 2 tbs Apricot Brandy or Cognac (Dry White Wine will also work)
● 1 tbs Ground Ginger
● 1 tbs All Spice
● 2 tbs Orange Juice
● 1-2 Pork loins
● Olive Oil
● Salt and pepper
For the glaze: Combine jam, mustard, brandy, ginger, all spice and orange juice in a pot over low heat. Bring it to a simmer and let it reduce (about 10-15 minutes). Use about ⅓ to glaze and set the rest aside for serving (you can also reduce the amount of glaze if you don’t want to serve it on the side to keep the carb count even lower).
Rub pork loin with olive oil and season with salt and pepper to taste. Heat grill or grill pan to medium low heat and cook pork loin until juices run clear (about 30 minutes), turning and glazing every 5 minutes.
When done, remove from heat and let rest for 10 minutes before cutting and serving. Eat it with a side of scrumptious roasted brussel sprouts for an easy dinner.
No Bake Cheesecake Fluff Parfait
Adapted from Jennifer Banz’s Keto Cheesecake Fluff
Ingredients:
● 1 cup Heavy Whipping Cream
● 1 8oz Brick of Cream Cheese, softened
● Zest of 1 Lemon
● ½ cup of your favorite low carb sweetener
● Jackie’s No Sugar Added Strawberry Pineapple Jam
● Chopped Pecans
Whip cream until stiff peaks are formed and set aside.
Add softened cream cheese, lemon zest, and sweetener and beat until smooth. Fold in the whipped cream. Stir gently until fully incorporated and smooth.
In your favorite cup or glass, spoon in a thin layer of the pecans, then a thicker layer of the mousse mixture, then a tablespoon of the jam. Repeat and top with more cream and garnish with pecans.
Low Carb Strawberry Pineapple Cheesecake
Adapted from Delish’s Keto Sugar Free Cheesecake
Ingredients:
● ½ cup Almond Flour
● ½ cup Coconut Flour
● ¼ cup Shredded Coconut
● ½ cup (1 stick) Butter, melted
● 3 8oz. Blocks of Cream Cheese, softened to room temp
● 16 oz. Sour Cream, at room temp
● 1 tbs Stevia
● 2 tsp Pure Vanilla Extract
● 3 Large Eggs, at room temp
● Jackie’s No Sugar Added Strawberry Pineapple Jam
Preheat oven to 300 degrees. Grease an 8 or 9 inch springform pan and cover the bottom and edges with foil. In a medium bowl, mix together the flours, coconut, and butter. Press the crust mixture into the bottom and a little way up the sides of the pan. Place the pan in the fridge to chill while you make the filling.
In a large bowl beat the cream cheese and sour cream together, add in the Stevia and vanilla. Add the eggs one at a time, continuing to mix after each addition. Spread the filling evenly over the crust.
Place cheesecake in a deep roasting pan and set on the middle tray in the oven. Carefully pour enough boiling water into roasting pan to come halfway up the springform pan. Bake for 1 to 1 ½ hours until it only slightly jiggles in the center. Turn oven off but leave the cake in the oven with the door slightly ajar to cool slowly for an hour.
Remove pan from water bath and remove foil. Evenly spoon jam over the top and allow to chill in the refrigerator for at least 5 hours (or overnight). Slice and serve.
Keto Friendly Strawberry Pineapple Ice Cream
Adapted from Delish’s Keto Ice Cream
Ingredients:
● 2 15oz cans Coconut Milk
● 2 cups Heavy Cream
● ¼ cup Swerve Confectioners Sweetener
● 1 tsp. Pure Vanilla Extract
● 1 pinch Kosher Salt
● Jackie’s No Sugar Added Strawberry Pineapple Jam
Chill coconut milk in the fridge for at least 3 hours (but ideally, overnight) before attempting to make ice cream.
In a bowl spoon out the coconut cream (leaving the water in the can) whip until creamy and smooth. Set aside.
Whip heavy cream until stiff peaks form adding sweetener, salt, and vanilla. Fold whipped coconut into cream mixture until well combined and spread evenly in a loaf pan.
Dot ice cream with spoonfuls of jam and use a knife to gently mix through, creating tangy, sweet swirls.
Freeze until solid (about 5 hours).
